Lemon Poppy Seed Muffins

For as long as I can remember, I’ve always loved Lemon Poppy Seed Muffins. That lemony flavour, paired with poppy seeds, is hard to resist. I wanted to create a healthy version that I wouldn’t have to avoid eating. These are made with whole grains, good fat and they don’t contain anything artificial. I think these come pretty close in flavour to the refined version and the lemon glaze is just so good!

Recipe: Lemon Poppy Seed Muffins

Ingredients:
1 cup light spelt flour
1 cup oat flour
1 heaping tbsp. poppy seeds
1 tbsp. lemon zest
¾ tsp. aluminum-free baking powder
¾ tsp. baking soda
¼ tsp. sea salt
2½ tbsp. melted coconut oil
1 egg, at room-temperature OR flax egg
½ cup raw cane sugar OR coconut sugar
½ cup unsweetened applesauce
¼ cup fresh lemon juice, ideally a meyer lemon
¼ cup + 2 tbsp. almond milk

For the lemon glaze:
4 tbsp. icing sugar, sifted
¼ tsp. pure vanilla extract
1-2 tsp. fresh lemon juice (add gradually to consistency that is easy to drizzle)

Steps:
Preheat oven to 350F. Line muffin tray with 12 paper liners, or grease lightly with coconut oil or butter. In a medium-sized bowl, combine both flours, poppy seeds, lemon zest, baking powder, baking soda, and sea salt. In another larger bowl, whisk together coconut oil, egg, sugar, applesauce, lemon juice and milk. Next, add dry ingredients to the wet and mix until well combined. Batter should be on the thick side but if it seems too thick add a little more milk. Scoop batter into each muffin cup, if you keep them small you’ll get 12. If you like them a bit bigger fill cups more, which will give you about 10-11 muffins. Place in oven and bake for 23-24 minutes or until an inserted toothpick comes out clean. Remove from oven and transfer to a baking tray. Allow muffins to cool before icing. For the glaze, combine all ingredients and whisk until smooth. Add the lemon juice gradually until you find it pourable. Then once muffins are cool, drizzle over top each muffin.
